STORY: Almost needs no introduction at this point. But here goes...A single vineyard SB, sourced from Napa's Oak Knoll district. We ferment on 4-5 different yeast strains, across multiple stainless steel and neutral oak barrels, and leave it all on the lees to fatten up over the winter. The resulting blend aims to highlight the character of the vintage in the most meticulously balanced fashion. It starts off delicious right at bottling and then seems to reveal more surprising amazing flavors with each passing day.

VINIFICATION: We like to ferment the SB in a combination of small stainless steel barrels and neutral French oak. We also use a wide variety of exotic yeast strains to bring multilayered complexity to the blend.

ELEVAGE: 7 months, sur lees.

TASTING NOTES—Full and exotic, with lively aromas of guava, pineapple, lemon ice, mangos, fresh alfalfa, persimmons, cinnamon, and Starburst candies. A simply luminescent mouthfeel. All at once, zesty, creamy, and silky, with persistent layered flavors of mandarine orange, white raspberries, grapefruit, white peach Meyer lemon flesh, golden raisins, and a finish that goes on and on, beckoning another sip.
