STORY: One of our most fantastic Sauvignon Blancs yet. And a great way to taste what the 2018 vintage is all about. We harvested this Oak Knoll vineyard while the fruit was overflowing with spectacularly vibrant energy, like the vintage itself. A gentle pressing of the grapes revealed the exotic pineapple, citrus, and floral characters, even at this early stage. And unlike most all of our red wines, which ferment on native yeast, we take a more controlled tact with the Sauvignon Blanc. Each stainless steel barrel and neutral French oak barrel gets fermented with one of five distinct yeast strains. Some to encourage weight and volume on the palate. Some to highlight the citrus. Still others to bring out the tropical elements, and so on, until we arrive at what we envision as the ultimate balance point for this stunning and classic Napa Valley Sauvignon Blanc.

VINIFICATION: We like to ferment the SB in a combination of small stainless steel barrels and neutral French oak. We also use a wide variety of exotic yeast strains to bring multilayered complexity to the blend.
ELEVAGE: 7 months, sur lees.
PRODUCTION: 90 cases
TASTING NOTES — Heady aromas of cold limes, pineapple, guava, lemon bar, tropical flowers, powdered sugar, and gardenia. The palate is electrifying, with lemon sorbet, mandarin orange, fruit cocktail, nectarine, stardust, and a delightful thirst-quenching drinkability. Plenty of crispness to pair well with basil pesto pasta, seafood of all sorts, french bread and cold butter, roasted beet salad, margarita pizza, and sunny days. (100 cases produced. $40/btl.)
