VINEYARD: A blend of four unique Napa appellation vineyards

VINIFICATION: We approach each of the vineyards featured in our Napa Valley cuveé as individual vineyard designates. It is not until we have given each wine ample time to become its final self that we even begin to put the preliminary blend together. And so it was, one month before bottling, that we laid out all the barrels we had ever dreamed about using for the Napa Valley Cab. Then clear the palate, clear the mind, taste every barrel, and listen to what each wine has to say. Fermented on native yeasts, punched down by hand in open top fermenters, and gently pressed directly to 75% new French oak barriques, where the wine matured for 18 months before we bottled it unfiltered.

TASTING NOTES: A Napa-styled powerhouse with loads of charm. Aromas of cocoa nib, boysenberry candy, leather, sweet pipe tobacco, leather, orange peel, milk chocolate, candied dates, and sweet tea. The flavors burst onto the palate in a luscious array of weighty red and blue fruits, currant, cherry bark, black pepper, coconut, German chocolate cake, raspberry candy, and a deeply satisfying, lingering arc of a finish that goes on and on. Pair with T-bone Steak, mashed potatoes, aged cheddar, or roasted garlic pastas.
